Carpaccio style Portabella Mushrooms and Apples

Mushrooms - Hmmm love it for has got to me to try so many new flavors and try new styles as well. The one i have made today is a Portabella Mushroom, they are normally huge in size n tasty.

Portabella Mushroom


    4 portabella mushrooms
    2 large Apples
    2 tablespoons (30 ml) light olive oil, halved
    Fresh ground pepper and sea salt
    Garnish with fresh fruit if desired or Parmesan Cheese 



Clean mushrooms and scrape out gills.
Now place half of the oil into a hot sauté pan over medium heat and add mushrooms.
Sweat each mushroom for 2-3 minutes per side.
Salt and pepper mushrooms at this point to taste.Place the mushrooms on a cutting board and set aside.
Meanwhile cut apples into 4 sections and remove core/seed area.  Slice Apples at an angle as thinly as possible.
In another sauté pan, heat remaining oil until hot. Add Apples and cook until just becoming translucent, about 4 minutes. Set aside.
With both the portabella and apples, slice each at an angle, as thinly as possible.

To arrange, start with mushrooms and alternate with Apples in a fan like design.

Garnish it with Parmesan cheese and Steamed Beans.

Thai Green Curry with Steamed Rice

Thai Cuisine, I first tasted it in SHIRO's UBCity Mall, Bangalore and from that nite i have been a fan of this cuisine. Thai food Looks good and as well as taste good. The ingredients are simple and yet it burst in ur mouth with different textures and flavors.

Ingredients for the Thai Curry

1 3/4 cups of unsweetened coconut milk
3 tablespoons of Green Curry Paste (Store bought as i didnt find lemon grass)
1 cup of broccoli florets
1/4 cup Sliced Carrots
1/4 cup Aubergine cut into small pieces
1 yellow Capsicum chopped
Few Spring Onions
2-4 Button Mushrooms or Shitake
1 cup water
Salt to taste
1 teaspoon oil
chopped basil leaves or kaffir lime leaves.


Heat oil in a pan and stir fry the broccoli, carrots & mushrooms on high heat for a few minutes until steamed, yet crisp. Turn off heat and set aside.

Pour the coconut milk, water, curry paste, salt in a sauce pan and mix well. Turn on the heat and bring the curry to an active boil. Add the stir fried vegetables and allow it to simmer stirring occasionally until the curry thickens a bit about 10 minutes.

Transfer to a serving bowl and sprinkle with cilantro/basil/kaffir lime leaves and serve hot with white Steamed rice.

Cinnamon Nutty Custard with Jelly !!

Dessert, After a long time i finally get sometime to spend in the kitchen and make few of my favorites and try new stuff. I came across this lovely Custard and thought i should give it a twist .. As Always :-) So here it is something for the sweet tooth all around the world.

Add Cinnamon Nutty Custard with Jelly

For Custard:

1 Cup milk
2 Tbsp custard powder( I have used vanilla flavor)
2 Tbsp sugar
Pinch of Cinnamon Powder
1 Tsp chopped pistachios
1/4 Cup Water

For Jelly:

3 Tbsp of Jelly Crystals ( I have used Strawberry flavored Vegetarian jelly)
1/2 cup water
Strawberry cut into small pieces.


Boil Milk in a pan and then add sugar, cinnamon & pistachios.
Keep stirring so the milk doesn't stick to the pan.
Dissolve the custard powder in 1/4 cup of water & add to boiling milk slowly & keep stirring to avoid any lumps . 
Just stir for 3-4 minutes & turn off the heat. Let the custard cool completely before assembling.

For the jelly , boil half cup of water in a pan
Add jelly crystals to the boiled water & stir well until the crystals dissolve completely.
Let the jelly mixture cool before adding any fruit. 
Refrigerate for until it needs to be served.

Sooji Ka Halwa

Navrathra Special, We preform the puja and then distribute the halwa in the devotees present in the temple. One of the quick dessert that you can make which is in itself so tasty.

For Halwa:

  • 1 cup Sooji/semolina
  • 1 cup Sugar
  • 1 1/2 cup water
  • 1/2 cup ghee
  • 2-3 green cardomoms
  • Raisins (kishmish)


  1. Heat the ghee in a pot and add the cardamoms in it . The flame should be medium , now add sooji and keep on stirring till the color changes .
  2. Add water to the sooji on very slow flame  and immediately mix, then add sugar and mix it well.
  3. Add kishmish or any other dry fruits which you like and cover the lid .
  4. Take off from heat after 5 minute.
  5. Garnish it with Chopped Almonds. 
Serve it Hot

Aloo Cheese Balls

"Aloo " My god this can make each and everyone hungry and run for food at my home.

After a hectic day at office, Returning home i made a simple Aloo paratha for lunch and as always i had a left over masala.. do you also have the same issue with more left overs from lunch? I do !!

Mukul loves teatime snack and thats when i tried making this cute little round balls which turned out easy and yet very tasty when Hot Masala Tea. Hmmm sometimes i think i have alot of geines of my mother in this matter.. he he she is one who has always done something unusual with the left overs. So did i tried. I hope you guys will always impress our mom's with this recipe.


Left Over Aloo Masala
Bread crumbs
Morzella Cheese
Italian seasoning - Which you get with Pizza hut or Dominos
2 Tsp Corn Flour
Salt to taste - just be a bit careful as we are adding cheese as well.
Oil for deep frying


Add the Corn Flour and Italian seasoning to the left over Aloo Masala.
Make Small round balls and keep a piece of cheese in middle and then roll them over the bread crumbs.
If you want you can rrefrigerate the Aloo cheese balls for about 20 mins and then deep fry them untill the outer layer turns Brown.

Serve them with Hot Masala Chai or with Tomato Salsa Dip.

Kabuli Rice

The name sounds so very peshawari right!! but its actually a recipe from Jodhpur - Rajasthan. I am sure most of you might have never heard about it also, so i took a chance to update you guys with another new recipe.

"Kabuli Rice" does taste good only with long Basmati rice, its flavour and the appreance is so too simple yet this is a very heavy meal. Layers of rice & masala's gives it a wonderful flavour to our taste buds.

So lets start preparing this now, Ingredients are very simple and method too. Hope you guys enjoying while giving it a try.


2 Cups of Boiled Basmati Rice
1 Onion Sliced and Deep fried
1 Potato Sliced and Deep Fried
1 Bread Slice - Cut in Cubes and deep fried
1 Tomato Sliced
1 Cup Curd/Yoghurt
1 Tbsp of  Mix Dry fruits of your choice - I preferred Raisins, Cashewnuts
1 Tsp Garlic Paste
2-3 Tbsp Ghee
A dash of Hing
1 Tsp Whole Jeera 
2 Tbsp of Onion and Green Chille Paste
1 Tsp Red Chille Pwd
1 Tsp Tumeric Pwd
1 Tsp Garam Masala

Head the pan with Ghee then add whole Jeera, when it starts to splutter add the onion & green chilli paste, garlic and fry till they turn golden brown.
Then add the beaten Curd and Dry Masala, heat it till the oil separates.
Add the tomato slices and deep fried potatoes, Onions to the pan, Mix them and let it cook for about 10 mins on low heat.  Add dry fruits at this stage and salt.

The Masala is now ready. So , lets plating it up.

In a large bowl, first put a layer of  basmati rice, then add a layer off bread pieces followed by layer of the masala. continue the process of the layer and then to finish it you can either add saffron  and coriander.

How to Store Vegetables & Fruit Without Plastic

After a amazing and hectic week coming to an end, i found this very useful article. Often we store the vegetables not in a right way and end up throwing few spoiled ones. This happens mostly to the working class women who dont get time to complete their day to day cleaning job. Aww ask me!! after a hectic day coming to an end, just wish that i can spend some time cooking something exotic and simple at home with fresh vegges.

This would surely help me keep the vegges fresh for upto 2 weeks. Just few simple steps to follow and stay healthy & Fresh !!
